Colour:
Light amber with copper reflections, bright.
Nose:
“sweet” notes, marzipan, custard, Baba’s infusion with ripe yellow fruit, cooked quince and citrus tips.
Palate:
Important personality, honeyed approach, aromatic, slightly balsamic, notes of “alcoholic” pastry, lively spices, candied ginger.
Finish:
Full, robust, warm.

We started with two releases of Single Cask. Monitoring the maturation progress of each barrel together with the Master Distiller is the most important activity during aging, through olfactory analyzes and regular tastings in search of the optimal moment for bottling our whisky.
